I tried mine out on sweet potatoes. Went thru them better than my Tanaka Sekiso and Laser AS 240mm gyuto's, maybe a touch easier than my AS Laser and Sekiso Nakiri's, too. Been a VERY long time since anything went head to head, let alone beat out those 4 blades! Now I need one in 240mm :) They nailed the grind and HT on these Mark!!!

240s are being made now. I should have them soon. We just got the 270s and the smaller santokus the other day.
