Wife has an orchid fetish, so I tend to value any 'contested' item I buy in "ENOs", or Equivalent Number of Orchids :lol:

Really looking forward to putting this blade to use on my new walnut cutting boards (mentioned in another thread) that arrived this morning. These cost me 7 ENO, but I accidentally had them sent to my airfreight courier which ended up doubling the cost! I really must remember NOT to ship 38lbs of wood by air next time...

Is there any chance of this in a Wa handle, or something not Western? I'm out of the restaurant this year and all the knives I want from now on are more art to cook with, than strictly business. I wish this was out when I bought my Kikuichi for my line knife!

Guys,
Let's see. Comparing my hobby (addiction) to hers would be using something I refer to as logic. We don't use logic in my marriage and it's my fault. I never put it in the vows. Damn. If logic was her thing I don't think I would love her as much though. So it all plays out in the end. Which is me not getting every knife I want.

Mark (or any others who know),

I'm about to buy a 240mm gyuto, probably this one. My only question is about the profile. I see a pic of the 210 which appears to be pretty curved all along the edge. I assume, this being a 240, it has a bigger flat spot?

(My own points of comparison are my two 210mm gyutos: a Moritaka (very flat) and a Tojiro DP. I'm hoping for something in between.)
