I am anxious to read some reviews on the new 240 Gyuto. I have the Nakiri which is AWESOME 8-)
I really wish I could talk myself into getting one. Being a home cook, it is hard for me to justify the purchase.
I probably have 3 dozen or so now, not to mention I just sold a bunch on the popular auction site.

It's HAP40 what more justification is needed? With J-knives you always need "just one more" ;)

The wife just hit me with "we have too many knives" lecture tonight at dinner
I have 10 up for sale on the popular auction site this week.
And I already sold another 10.
I just ordered a sweet little Kajihara Kurouchi Kobocho, Hope I can sneak it in when it comes ;)

She likes small knives, so maybe after she sees me using it she will relent a little.

Not going to lie, sometimes it's tough to convince my wife. But my secret weapon is the receipt and, "We can write it off as a business expense." It gets the accountant in her every time. I just have to be careful about overuse.

I also try to balance knife purchases with purses and shoes. Balancing of yin and yang makes for a harmonious household.
