Hey guys, Im from Brazil and just got my Kohetsu HAP40 Gyuto. Mark recommended me this knife and he sure was right. What a piece of art! Thanks for the great suport Mark

I have a few concerns on how to maintain this knife. How it should be cleaned? An Edge Pro would be apropriate for sharpening, i dont have any experience with water stones and dont wanna ruin the looks of the knife. Ill be using ocassionaly for home cooking, more of a collectors item.
All inputs will be nice.
