I generally focus on knife brand, but, more than that, technique. Every time I see one of the scrape the edge of their knife across the board my butt puckers.

Not to mention wiping/tapping it on the edge of the pot

Just saw Jeff Mauro "Sandwich King," on Chopped All-Star, dropping a Miyabi Gyuto, point first, onto the chopping board to "show" he is done cooking.

I wish he dropped on his foot instead... disrespecting the tools. :evil:

For a change, I would like to see someone on TV wipe their knives :)

I reckon, these "on-air guys" could care less about the on set steel they have put in front of them. No excuse for poor habits, but if I was forced to use that junk, I'd be pretty pissed at it, too.
