Hello, I'm writing to ask whether the universal 210 gyuto saya will fit the Masamoto 210mm gyuto, which I am leaning toward buying!?!
Also, for the Masamoto gyuto, which sharpening stone(s) would you recommend? I was thinking a two-sided stone, such as the King Combo 800/6000 or the Shun Combo 300/1000, but not set on those…would defer to your recommendation. Also, based on what you would recommend, would there be anything else regarding the stone(s) that I would need to consider, such as a holder for the Shun whetstone?
My plan is to also purchase a utility knife and paring knife/petty, but have not fully decided yet what manufacturer to go with. I suppose the Masamoto, but not set on that.

Yes if you buy them both at the same time I will make sure you get a saya that fits.

Try something different than the Masamoto just so you can sample a different manufacturer. How about a Fujiwara? They're good and they're cheaper.http://www.chefknivestogo.com/fufkmpe15.html

Thank you for your recommendations! I ended up going for the Masamoto VG 210mm gyuto, Fujiwara FKM 150mm petty, and the Tojiro DP 90mm paring knife. For the sharpening stone, I went with the Imanishi 1000/6000, and I purchased a universal stone holder as a base. I'm sure looking forward to trying out something different than the Calphalon and Chef's Choice knives I've been using for the past 20-some years!!
