do you have any suggestions for a good knife to break down
fish? Work has now asked me to do some fish butchering and the only
knife I have is an old beat up Wusthof and a crappy Dexter. Any
thoughts? Looking for more of a western style - although I have been
dying to get a Deba!

Hi Rob,

Yes deba knives are designed for fish processing and I encourage you to try one.

What size?
What price range?
Are you right handed?
Are you ok with carbon steel?

I'll just give you a general pick. If you answer the above questions on this thread the guys will be able to give you recommendations that are more specifically targeted at your likes and needs.

Yeah, but a western deba isn't really designed for fish butchery like a true deba is. The design of the deba with it's hollow back and single sided grind is used to one's benefit.

I typically use a suji for what little fish butchery I do......along with a heavy cleaver thing I have for the heavy work. I like the long length for long pull strokes.

Other than a suji, I like this knife as well....though I've only used on briefly:

I'll second a sujihiki for fish. On round fish I use my Fujiwara FKM. On flat fish, I still use a western boning knife, though I think a gokujo as discussed recently around here would be an excellent and maybe better choice in the same style.

Japanese fish mongering is something I've never been taught, so I can't speak to deba use.

Videos abound illustrating deba technique.

That would be my choice, and I think anything else is a compromise. The Japanese have worked this out over hundreds of years, and western knives, or adaptations of western knives, just aren't the same.

This isn't to say they won't do the job, but you can drive nails with a pipe wrench, too.

There are single bevel debas with western handles too.

Here is a Glestain (although not sure if it is a true single bevel.)

Neither the Glestain or Fujiwara are single beveled.
