Stones are better but only if you use them. So many people put them in the drawer and never sharpen on them.
If you want an easy roll type sharpener I like the Minosharp 3 stage sharpener better. The wheels are big and it's water based so it just works better.http://www.chefknivestogo.com/glmipl3sh.html
The Edge pro is superior but it's also more money.

Thanks everyone for helping the noob and providing the valuable feedback! I just ordered the Tojiro DP 210mm knife along with the Minosharp. You know, humble beginnings and all that... What a great forum! I'm sure I'll be adding to the collection as funds allow. And thanks for talking me out of the set mindset!
