Knife recommendations for a tough knife.

This customer wants something a little more robust than the Tojiro DP...


Ok, I know you want a 9-10" Chef knife. 9 or 10
Are you right handed? Yes
Do you know how to sharpen? Yes
Do you like to rock the knife or push cut primarily? Rock
Do you want a stainless knife? Yes
I'm assuming you want a western handled knife like the Tojiro and the Wusthof you owned before? yes
How much did you want to spend? $150.
I'm also guessing you would prefer a knife that is tougher than the thin edged Tojiro? Yes

Hiromoto AS or Richmond Artifex.

I am willing to bet that the culprit for fragility was the Tojiro's brittle VG-10, and not the thinness of the knife. Unless he's got 2mm+ chips, it's the steel.

F. Dick 1905. This is not your average German knife. I love it just as much as my Japanese knives, really well made.
