After spending a considerable amount of time checking out your site for upgrading my knife collection, I thought it better to seek advice rather than spend money and possible not get products that met my needs.
Not a professional chef (avid amateur cook, - not lacking in basic knife skills, but not a pro either)
Left handed (me); right handed spouse
Live in Canada (shipping restrictions)
Budget would be ~$225-275 for a chef's knife, with applicable treatment to other knives (Nakiri, pairing, etc)
prefer a western-style handle but obviously prefer Japanese steel & quality.
Aesthetic is secondary to function
Any help would be greatly appreciated.

Depending on if you know how to sharpen, there's a VG-10 Kikuichi Damascus you might like, as well.
Your best bet is probably a Richmond Artifex or Ultimatum (depending on size preference of which you don't note) w/a custom handle to hit your budget.
