I don't understand all the negativity towards Henckels.
I love my Henckel (even tho i don't use it as much as my vegetable knives)...it has great steel, tougher to sharpen but holds a lasting edge, nice feel, nice for slicing...it's great! I have one of the yellow handled, commerical-type twins...and i don't think that it would be all that different sharpening it, bolster or not! You just have be mindful of the bolster! YMMV.
I think all the knives on this site are good, depending on your likes, preferences, etc...
Great choice Carleen! Really hope that you enjoy that knife! I've heard awesome things about that steel.
