Kitchen Knife Basics Videos

My friend Steve did these super slick videos for Sue and I. They answer a bunch of questions about the differences between Western and Japanese knives and introduce a bunch of terms that we tend to take for granted when we talk about knives on the forums. Take a look if you're new to high performance kitchen knives and I think it will be a big help to you.

Definitely a great introduction and answers a lot of FAQ

One other term that occasionally comes up is

Distal taper --A gradual thinning or narrowing of the blade profile when moving from the handle end toward the tip
