Hi. What's the original intended purpose of a Kiritsuki? What jobs do you think they are best for? Thanks.

it's a gyuto and a yanagi / slicer with a sword tip.

the single bevel ones are yanagi / gyuto hybrids

the double bevel ones are more like sujihiki/gyuto hybrids.

A traditional kiritsuke (single bevel, Japanese made) is rather much a multi-purpose knife. I remember reading, or being told, that the use of a kiritsuke is usually only done by the most skilled of chef's.
