I picked up the Kono Kiritsuke 270 HD that was in the classifieds.

This thing is a beast, easy to sharpen holds a great edge comes in closer to 260 than 270, I do have to sand down the handle a little bit as the maker made is pretty large and possibly take an inch off of the end to push the balance point forward so the knife does more work.

However the blade itself I love. I'm more of a push cutter and wanted to try one and add it to my collection and am VERY happy I got this one.
I have 3 Kono's now all semi or stainless (Ultimatium 270, Richmond Addict SLD, and the 270 Kirk) Love them all would definitely recommend their stainless steels in a heartbeat, excellent grinds great edge retention and beast of knifes.

There is the Moritaka Kiritsuke ($275) in Close-Outs that matches various of your criteria:

[X] Im in love with the kiritsuke style
[X] I prefer a pretty flat profile
[X] I'd prefer 270,
[X] Japanese style handles
[X] aogami super @64 RC (holds edge long)
[X] I love tsuchime and kurouchi finishes.
[X] I love that moritaka,

Alright, I've narrowed it down to three. Its either that moritaka 270, the kono white#1 with custom handle, or that takeda. While that takeda is a bit smaller, it still had caught my eye. Anybody have any experience with it or any if takedas products?

The Takeda will be shorter, lighter and thinner but around the same height as the Moritaka. A difference to consider with 5 hours of prep at a time.
