Looking for a recommendation for a Kiritsuke 270 mm... Price <$400.. right handed ... carbon or stainless... going to be used as general purpose knife ... veggie prep... etc etc..

From the fact that you are looking for a "general purpose knife" I can conclude that you are looking for a double-beveled gyuto with a kiritsuke style profile, not a true single-bevel kiritsuke.

Some candidates are the Konosuke Fujiyama (http://www.chefknivestogo.com/kofuki27.html) and the Suisin Inox honyaki (http://korin.com/Suisin-Inox-Honyaki-Wa-Kiritsuke). If it was in stock, another to look at would be the Moritaka (http://www.chefknivestogo.com/moki27.html).

Do not make the mistake of thinking that a single-bevel kiritsuke is a general purpose knife. It is actually a hybrid of a yanagiba and an usuba.

Well under budget, very good steel, very good cutter, a lot of knife for the money. Holds and takes an awesome edge. :)
