Other than one knife is stainless and another is carbon, what are other differences between this two knives?

It's been a lot of years since I held a 240mm Elite Carbon gyuto. Without finding someone who owns/uses both, this is gonna be tough to get an exact.
The primary difference is the steel though.....the Elite's use a mediocre carbon, the TKC uses a great mostly stainless steel.

The Elite Carbon is going to be a little bit lighter in weight and a little bit more nimble overall. The handle on the TKC is a little bit bigger, and I believe the blade might be slightly taller on the TKC as well.
Both steels have great sharpening properties and will get very sharp. "Some" people aren't thrilled about the steel type used in the Elite carbon, but I can tell you from experience they did a wicked good job of heat treating it. I was impressed.
