Kajihara Kurouchi Santoku vs Nakiri

Fri Dec 13, 2013 4:37 pm

Looking at Kajihara Kurouchi Santoku 165mm weight: 5oz
blade length: 169mm
total length: 310mm
spine thickness: 3.95mm
blade height: 46.29mm

Can you please let me know the Tsutomu Kajihara Kurouchi Nakiri 165mm Specs? and is the Santoku blade just as flat or?

While I don't know the specs of the nakiri, typically they will have the flatter cutting edge when compared to a santoku. The pics look like they confirm this as well. The nakiri is purpose built for veggies where the santoku is more of an all around chef's knife. The nakiri should also be good for push cutting and chopping as it has a flat edge, and the santoku has a flat-ish edge so it can do push cutting, chopping, and some shorter rocking cuts thanks to its minimal belly. The santoku shape also offers a nice point which I love as well.
