Just Received my Moritaka 240mm Gyuto

Hi All

I just received my Moritaka 240mm Supreme Series Gyuto.........two questions:

1. I have never owned a knife this good before, and never sharpened with stones......should I attempt it straight away? I also purchased a King 800/6000 stone combo. Mark previously suggested I practice my technique on a strop before trying stone - but the strop set was out of stock so haven't ordered it yet.

2. Will it be sharp enough out of the box for beginner use? Should I wait till the strop comes in before I do anything.

Try to sharpen one of your old kitchen knives. Practice with it before touching the Moritaka.

Make sure you can hold the angle steady before subjecting the more expensive and harder steel Moritaka blade to amateur sharpening. In fact, sharpen about 10 knives before trying the Moritaka, old ones, friends knives, pocket knives, or any you can get your hands on. It takes some muscle memory before you can really do a good job.

Also, take some electrical tape and tape over the Kurouchi finish so you don't accidentally mess it up. As you work with the other knives you might find that you will enjoy other stones compared to the King, especially considering the hard steel of the Moritaka. Hold off on the strop set and get the 5 piece sharpening set and the 140 Grit Diamond Plate and Universal Stone Holder.

The strop set will do wonders for your edge polish, but not much toward sharpening which has to come first.

It looks like Mark is expecting it back in stock any day now. If you cannot wait, use this set as a guide and build your own set.

If you stick with the king combo, you can just stay with that, but you could use an in-between stone. Something around 2K would do nicely and would also serve as a good finishing stone for your softer steel knives. I have Naniwa Aotoshi 2k "Green Brick of Joy" and really like it.

Also, make sure you have something to flatten your stones like the 140 Grit Diamond Plate and Universal Stone Holder.

No, don't practice on the Moritaka....bad idea.

Do practice on an old knife. If you don't have an old knife, go buy a cheapie from the store.

With said knife, you can practice to your hearts content without fear.

Moritaka should come well more than sharp enough....it might scare you in fact.
