I was wondering if I could substitute a Japanese sushi knife (yanagiba) for a slicing knife.

A true yanagi is a single beveled knife that not good for anything except slicing fish for sashimi or sushi.
A thin slicer can sub for a yanagi, but it doesn't work well the other way around.

Yeah, a true yanagi makes a really poor western style slicer.
