the "level" refers to the hardness of the particular stone, any thing above 3.5 is going to be quite hard and not as good for kitchen knives, not that they wont work but higher hardness stones are better suited to razor and woodworking tools. the niche hardness for cutlery is 2.5 - 3.5 imo

Doesn't it also refer to fineness of the finish? Aren't level 5 the finest polishers , level 3.5-4 a pre polisher types?

It depends on who is grading them! Level often refers to hardness, but there are variations with the grain size, too. Some places use a scale out of 10, others use 1-5. Hardness, grit rating, feeling (smooth vs rougher), the level of finish (cloudy to bright), speed of the stone, etc are all factors but hard to pin down and compare since each stone is different. They may look identical, but perform completely different! Usually, hardness is associated with a finer grit, but this isn't always the case. The Meara is a very hard stone, but around 4-6K or 6-8K depending if you have a slurry or not. My San Aoto is hard as well, but 3-5K. This is the fun of J Nats!

Nicely stated, Tim. Yes, hardness and fineness are 2 important parameters, but there is no single universal rating system - and I tend to take ratings I've seen with some degree of skepticism.

I was just swallowed up into this rabbit hole. Just ordered my first two from Ken. A Nakayama and a yaginoshima with matching nagura. Thanks ken!

Nakayama iromono. I talked to him about a few different ones on Friday and those are what I ended up with. He posted some pics of them so I could see them. I'm excited to start using them. I'll be checking my mail quite often this week.

I love my Nakayama Iromono , currently its my favorite Jnat. Great feedback. and very fine. Will follow your Yag Asagi nicely
