Is Fernandez right for me?

Mon Nov 05, 2012 5:12 pm

Hi,

I am looking for a 9" knife with substantial weight. I have the tojiro do western deba and love the weight, but the thickness is often times difficult with precise cuts. What is the weight of this knife? I have a drawer full of knives, but I am looking for a all- rounder in the kitchen with good weight and a beautiful handle, especially light wood, like to cocobolo. Any other suggestions?

Thanks

Lori

Watanabe's gyuto's were the first thing that came to mind with your description.

Hi Lori,

The Fernandez is a really good knife. Beautiful handle and it's thin and pretty light at about 6.6oz for the cocobolo one. The steel is excellent and he did a really nice job with rounding the spine and choil and putting a nice edge on the knife. I like them a lot.
