I am looking for a 9" knife with substantial weight. I have the tojiro do western deba and love the weight, but the thickness is often times difficult with precise cuts. What is the weight of this knife? I have a drawer full of knives, but I am looking for a all- rounder in the kitchen with good weight and a beautiful handle, especially light wood, like to cocobolo. Any other suggestions?

Watanabe's gyuto's were the first thing that came to mind with your description.

The Fernandez is a really good knife. Beautiful handle and it's thin and pretty light at about 6.6oz for the cocobolo one. The steel is excellent and he did a really nice job with rounding the spine and choil and putting a nice edge on the knife. I like them a lot.http://www.chefknivestogo.com/shfekn.html
