I am a happy owner of Hiromoto AS santoku knife. I love the great sharpness and edge retention. However I do not like that I have to wipe the knife every time after use or cleaning. I am interested to expand to a new petty 150mm knife. That’s why I am considering SS or VG line for easier maintenance (better rust resistance). My budget is about 100 USD. I would appreciate your recommendation for the best option (s) in this price range.
Besides I would need your advice for 1) a practical sharpening rod and 2) sharpening stone(s). Please keep in mind that I a newbe and I have never sharpen a knife by myself.
For your kind assistance and advise thank you very much in advance

Hiromoto offers a good petty with ginsan steel (stainless). It's hard and a very good knife and it's below your budget at about $75 for the 150mm:http://www.chefknivestogo.com/higi15pe.html
This Takayuki is a good one too and under your budget:http://www.chefknivestogo.com/satadahautkn.html
Tojiro makes a nice one and it's a good price:http://www.chefknivestogo.com/topakn12.html

Fujiwara FKM is a nice little petty. A friend on mine has been using his for a few months and hasn't had to sharpen it yet from the edge I put on it.
Get the 5 piece stone set. Use the Rika 5K for touchups instead of the steel or get a strop for touch ups.
