Partying last night till 1:30 only to wake up and open brunch at work.

Two redbulls later and I still slept on the subway ride home. I'm awake.. but just barely.

Met my new Sous chef, man is like a drill sergeant. It's good as if you're a hard worker you get praise, but if you mess up you better watch out. :lol:

Why oh why do I do this to myself xD

Brunch can be painful..I've been there brother and I know how it feels to pull yourself through,brain's throbbing,every pin drop sounding like plates clanging...
We do it cause of the people who genuinely appreciate what we do- the people who take the minute to come to the pass to thank the kitchen for giving them a meal to remember

this is where i get into trouble with our new sous...sometimes my "logic" doesn't compute with his...got my ass kicked off the line once for a situation like this.

I feel you Lunatic. I just pulled a 102 hour week last week during SXSW. I was lucky my stop is the last one on my bus line. I would have missed it a couple of times otherwise.

Working at a small club for member guest weekend will forever stick in my brain. Three meals served a day, sixteen to eighteen hour days, five days if you count the prep and arrival on Thursday, what a blur. The food was great, though. What a profession.

That shouldn't be an issue if you're the general who hired him.

My first sous was just a couple months out of being sous chef at trotters. Two words got he through a lot of situations. "yes chef"
