huge broken tooth. it made me mad with it. so i sent it to a restaurant for a little while as punishment.

i took it back today, i feel sorry now. It was abused for a few weeks in the trenches.

Yes it would be fun, its a solid vg10 shun edo. so it would resist a complete reprofile. they were selling them cheap online.

it would end up being a weird santoku or petty

Thank you guys, those are huge. and ill steer out of corn cobs.

taz, that´s great work (how much time did it took?. ill start this weekend, ill have to get some cheap coarse stones and protect my fingers.

its really thin and tall. lets see what can result.


doug: they say they were dismantling a golden corvina like this one.

Not very long, I have a variable speed belt sander :) So I ground the edge almost flat to the top of the chip and then thinned and reground the blade grind to make the knife thin again, expose the core steel and finish removing the chip/bent areas. Maybe 20 min? Stones will take much longer...
