I wanted to post a question to the forum but apparently there's some glitch - so i'm writing to you privately for some suggestions. I purchased from CKTG a 240 Goko Gyuto...it has what i'd call asymmetrical bevels, i'm sure you're familiar with it. Could you give me some advice on how to sharpen w/ my Edge Pro? Specifically should i keep the bevels as they came, or make them symmetrical - also if you're aware of the specific angles of the bevels. I used the magic marker on the bevels but truthfully couldn't figure it out to my satisfaction. If I keep the angles asymmetrical, any advice on the logistics of stone and sharpening each side at a time would be appreciated.

Here is an easy solution. Set the machine at 15 degrees and grind the edge until you get a burr. Flip and do the same. Now you have a 15 degree 50/50 bevel and you can easily use the machine with that angle going forward with all your stones on that knife without worrying about angles. Remember the stones will always win. So you don't need to try to be exact and try and copy the edge. Just make a new edge.

Ok, that helps. I just wasn't sure how much change I was ultimately making to the knife in making it symmetrical and whether I would be negating it's effectiveness in doing it that way.
