Thanks. Would appreciate some instructions on care of my moritaka carbon cleaver. I've been using stainless for over 30 years.

The biggest thing, really only thing, is to remember to wash and completely dry it when done using it.
Never leave it dirty or wet and you should be fine. If you plan to leave the knife unused for long periods of time, perhaps invest in some Camelia oil. Spread the Camelia oil over the knife and it will prevent the knife from rusting from airborne moisture (humidity).
