By the way, I'm concerned about the life of the wooden handles on these tojiro itk knives. Is there a to protect the wood, with some type of oil or anything like that?

tung / linseed / mineral oil mix.
so far i've been using a 50/50 tung and mineral oil mix
all food safe. so no worries about any food issues.

Yeah, I much prefer oils and waxes that don't fully harden. I love the waxes as of late including the Gun Stock Wax from Birchwood Casey.....great stuff.

+1 to Adams post, the BC gunstock wax is great. I usually sand mine up to a 800 grit sand paper then wax it.
Of course you can always rehandle them.

or you can just buy some beeswax, melt it down in a double boiler and mix in some mineral oil and tung oil (or just mineral oil), and you get yourself what basically is board butter.
should be cheaper too.
