Well since I got my kono HD the other day, took it to work for it's first use and here is how I go about breaking a new knife in:
Step 1: If the edge is good just run through strops to sweeten. If not take to appropriate stone to correct.
Step 2: Get a WHOLE lot of veggies and fruit to dispatch. Same knife for all items.
Today's list was:
16 pounds of strawberries sliced
24 kiwis peeled and sliced
8 water melons cut into 1/4
1 water melon cut into large dice, (also peeled)
4 cantaloups peeled and large dice
4 honey dews peeled and large dice
3 cantaloups cut in half
3 honey dews cut in half
4 heads of cauliflower cut into florets
20 heads of broccoli cut into florets
40 bell peppers (red, green, yellow) cut into julienne
8 onions sliced
3 pounds of mushrooms sliced
and to top it all off 2 cases of corn cut the top and bottoms off.
And do all in about 7 hours.
That is how I break in a knife
