Hah! I can identify with this for sure.

I think my 200mm 154-cm gyuto Ive got going on now is gonna be about 6 hours with a simple handle and belt finish blade. Double that time to satin finish the blade and add a few more hours to do a handle with bolsters. Thats with a SS blade that requires very little post heat treat grinding. If it were a oil hardening carbon steel you can add another 6 hours easy. (I dont have a water cooled grinding setup)
