Hi,

I just ordered the Richmond Artifex Honesuki 165mm, which is a single bevel knife. I have never sharpened one before. Is there a video I can watch to learn how?

I have the moritaki Agoumi (sp?) super petty 150mm and love it. Wanted a knife with more depth at the heel, and one for slicing onions and citris without staining so much. So, am trying the Richmond.

I have several Shun which I no longer use. I always rech for the Moritaki.

DENNIS <> I wouldn't suggest a single-bevel honesuki for that work, but to each their own. Whatever's clever for you. If that's comfortable for you... awesome!

Sharpening is not too unlike a double bevel, but you grind flat on the single bevel so it holds its own angle. Then you grind the back side flat on the stone only 1:10 to the front. Videos can be found on youtube... I'm sure.

I ordered the knife because i wanted to try a reasonably priced single bevel, stainless if possible, and I like the size. So, it's really an experiment on my part. I have a number of knives, but am really just getting into the Japanese knife world, other than my Shuns, which I hardly ever touch anymore.

It's a 80/20 grind which means most of the sharpening is done to the main bevel and finer stones for de-burring should be used on the back.

Should be fairly easy.
