 Post subject: Honing Aogami Super

I purchased a Moritaka 240mm Gyuto from CKTG a few months ago and LOVE my knife. It takes an edge so sharp that it will cut time.

The only issue that I have with it is that my honing steel doesn't seem to do anything to it. I strop it every other night with my 10k stone, but that takes a decent amount of time and adds to an already long day in the kitchen. I was wondering if a ceramic honing rod would be able to hone my knife and help me shave time off of my day. If it would, which honing rod should I take a look at? Thank you so much for your help.

SMIDEY <> Your steel is most likely softer than your AS. At CKTG the Idahone Fine <link> is highly lauded, as is the MAC ceramic <link>.

Honestly though, they still have their limitations. I find strops are much more efficient, and since they are dry, they are quick at work or after. <link> Strop - set <link>; it's double duty. They allow refinement beyond your stones in less expensive options, and they work to true your blade as a steel would but w/o degrading your high grit finishes.

If you already have a lapping plate for your stones, grab this strop set <link> instead.

I would also not recommend a 10k finish, its half the reason you are going to the stone nightly. Something in the 3-6k range would be more than enough.
