This has 80/20 edge, by the image it seems to be lefty but is not written! I'd like to know if it's really for left handed and if AEB-L steel is easy to sharpen with water-stones.

The Richmond Artifex is ground mostly on one side and the back side is flat. AEB-L is easy to sharpen but this one won't work for you.

I'm interested in a Honesuki as well but have a couple other questions. I am also left-handed.
Out of the three knives you referenced I was looking at the Moritaka. I am not wanting to spend the money required to purchase the other two. With the Moritaka being Aogami Steel, will I need to worry about it rusting or will the Kurouchi finish prevent most of that? Would I need to force a patina on the knife?
I've also heard good things about the Hattori HD and I was wondering if that would be something you could order? I found a left-handed version with a 50/50 bevel on another site. This also brings up the question of whether or not it's possible to take a 50/50 edge on a knife and get it resharpened to a 20/80? I know I wouldn't be able to do this with my novice sharpening skills, but I'm wondering if that's possible.
The one concern I have on the Moritaka is the handle as I've never used that type of handle before. I've used the D-shaped handles on the Shuns (although only right-handed versions). I've enjoyed the feel of the handle if it's in my right hand. I also enjoy the handle on the Kikiuchi knives as well. I'm not opposed to trying a new style of handle, but in many ways I'd like to try the new style of handle before purchase since I don't want to mess with returning a knife I purchase from CKTG.
