I've got HAP 40 knives coming soon at a really good price. You guys are going to freak out at how long they hold an edge. My prototype still has a very good edge on it after 6 months. HRC65 on my prototype.
When I sharpen this thing I'm going to try ceramic stones first but I may need to use diamond plates for them.

For the technically minded, you can download Hitachi's brochure in PDF form
has made at least a "Kamagata Western Style Kitchen Knife, Hitachi HAP 72 Steel 180mm Blade" but the one retailer I have found online for it is sold out and there is no pricing information. The marketing hype on the retailer's page seems intended for those looking more at Shun/Global-level knives, but it does say that the piece was hardened to HRC 68-69.
