Does the G-3 in the Hiromoton 210mm or 240mm stainless G-3 gytuo mean it is made of Ginsanko (Silver-3) steel?

Yes. Its a clad knife with powdered metal core.

If my remembrance is OK it's solid G3, good stuff by the way, fine grained, easy sharpening.

You may be right. I misread your post and, in fact, I have never heard of Hiromoton knives. I probably need reading glasses! Sorry.

Did you mean Hiromoto? If you are talking about Hiromoto G3 it is made of Hitachi Gingami No.3 (G3 Stainless steel), and is popular for those who want a stainless steel like VG10, and has high carbon durability and long edge retention, and yet easy maintenance of stainless. It contains high Carbon (0.95 to 1.10) and high Chromium (13.00 to 14.50), and is hardened to Rc. 59- 60.
