I just received the Aomori Hiba small cutting board Mark so generously offered as a try me price.
I always "break in" a new board by rubbing mineral oil on it every day for a week.
The website does not give any instructions.
Any thoughts on oiling the board?
Can't hurt Right?
I am calling this wood Japanese Cypress, it feels very hard, and should be tough.
The board size limits use to a petty, or possibly a small santoku-nakiri.
My wife likes cheese and fruit as a snack. I think this will be a perfect serving piece for that.

They gave me some instructions. It didn't say much interesting but I'll dig them out and post them tomorrow.

I jumped in on the full size. Should be in Friday.

Of course, I had to get a knife to go with it. I bought the Teruyasu Petty. I can't afford the Gyuto.....

Received my small Aomori Hiba cutting board yesterday.

Perfect for a small, handy cutting board. I especially like that the board is a single piece of wood.

I received this board a day early, I purchased the largest size. Unfortunately I grossly underestimated to size. It would take two of the boards to make up enough for my kitchen space. It is awesome and has that wonderful Hinoki smell. But my 165mm Nakiri barely fits on this thing. No big deal thanks to Mark and CKTG customer service.I just have to wrap it up and put it back in the mail.

The Teruyasu Fujiwara is also a bit of a mixed bag. The blade is great. F+F is not what I expected after everyone's glowing reviews. The blade is set in the handle a bit crooked, and there is a big (read, huge) gob of epoxy around the machi and ferrule. I'm definitely surprised. I don't love Ho wood anyway. Maybe this one can go to Taz too with my Gokos when I send them?
