I learned to sharpen on 2 knives, the hiromoto that adam did a custom handle on and a moritaka gyuto. Love aogami super steel.

A follow up on the Moritaka 240 that I purchased. I have had a chance to use it quite a bit and it is a great knife. The turn around time on this knife was amazing! I had it far quicker than I expected.
