The suggested knives are all really good. Here's a couple more that may be worth looking at.

Shaun Fernandez knives- here's a link to the page:

I have not used these knives so I have no additional information than what is on the site. Hopefully some other members could add some more data points on these knives.

Thanks atang.. but SF knives have no bolster.. I hate that look.....Shiro have jhandles.. Western is a must.

Ive revised my list after more time researching and have the following.. I cant imagine I wouldn't pick one of these. At this point, I would lean toward the one with he best Fit/finish, and best feel/balance, although the balance might be more a personal feel.

Kikuichi Moly 170.00 (not TKC because of reaction)
Sakai Takayuki Grand Cheff 165.00
Hiromoto Aogami Super 165.00..carbon edge is OK
Misono UX10 235.00

Ditch the UX10. Overpriced. If your wife is concerned about staining, the carbon is out, even clad, right?

Last, if this is old news, I apologize, but in reaction to your wife's comment - most J stainless knives will have rust spotting on them if they sit in water, or water sits on them. This would include laying the knife down after washing, but not drying off. It is pretty easy to rectify, but it will happen.

If you take care of the knife (after use, wipe off and air dry), you'll be fine. That goes for for carbon, semi-S and SS. Given that, the TKC still may be your best choice. If not, then the Masa VG.

Molybdenum Kikuichi will be a fair substitute, not quite a TKC. I would move into the Warikomi line of knives though over those, but out of your price range.

Ditch the Misono. Not worth the price IMO.

I'm surprised at the Masamoto being on the list, as the Aogami edge will be far more reactive than an entire TKC blade. Just saying.

Sakai Takayuki is a good knife from what I understand, as I said earlier, I don't think the Masamoto will let you down if you can't get the TKC.

Fergie - on the TKC, clean & dry when you're done using it and you should have no issues. The Hiromoto you referenced shouldn't be on your list if the TKC is off you list - it's a carbon steel core.

The Grand Cheff is a nice knife as well.

Decide if you want a little more of a middle/heavy weight Gyuto - Masamoto/Grand Cheff, or a light/middle weight Gyuto - TKC. Go from there. UX10 is overpriced compared to the others IMO.

They're all good knives - pick one ;-).

ok so from this new info, Yes, I def would want a bit more weight... so I'm very pleased if the Masa and the Grand fit that bill.. since these were my two leanings anyway,, I hadn't got to look that weight info up yet.

I'm sticking with these two then for a final decision.. yay for me.. I might just order both and decide from that perspective...

Ill circle back for feed back once I receive
