Hi all,

I have a couple of Henckels International Classic knives that I would like to sharpen. What is the most acute angle you would recommend? Is 18 degree per side too acute for this soft steel?

Wusthofs factory edge for the ikon line is 17 degrees so I think you would be safe at 18. I wouldn't go any lower though.

The International line is their lowest grade. I wouldn't be surprised if it rolled at 18 DPS. I would go to 20.

There is not much difference between 18 and 20, so little so that it won't make a difference in the edge rolling or not.

That said, I've sharpened German knives the same way, angle, stone, and strop as I do Japanese knives and the only thing that happened was the knife cut better... go figure.

I typically shoot for 15 per side on ANY kitchen knife.

I've taken my Germans down to 15 and as Jason said it was a big improvement.
