There are some many knives on your site, sorted by manufacture as well as type, I'm losing track, so hope you can help.
I am looking for a Nakiri knife. I currently have a Shun 6" chef. I like it but would prefer something that does not "look" like it was made so much for the broader consumer market. Something with nice aesthetics as well as performance.
Here's what I believe I am looking for:
Damascus or stainless blade, not carbon
Nice wood handle, preferable dark but not essential
One that can take a good edge (I'm a good sharpener with a 1000/6000 stone)
I would prefer to keep the price under $150, which I know limits my choices.
