Help me set up a good progression form my knives.

Hello there, I have a set of Shun Classics and a few Mac knifes and would like a recommendation on some sharpening stones. I am thinking about a 3 or 4 stone set to get a nice polished edge. Maybe a snow white for a finisher? I would really appreciate your help thank you.

This is a good base set that will do the job for you. The Arashiyamas work on a wide range of steels and seem to work particularly well on VG10 for some reason which is what your Shuns are made out of. I never sharpened a Mac on them. I'm sure they'll work fine.

I have the set that Mark recommended and it is a good set.
Another option:
Latte 400
Naniwa Aotoshi 2k Green Brick
Naniwa Snow White 8k

I gotta throw in a +1 on Adam's recommendation . . . but i do like Jeff's recommendation too, I just think the extra stone in Adam's recommendation will serve you well. But that Green Brick truly is a "Joy".
