Help me replace wife's POS Hoffritz Sabatier

My wife's "go to" knife is an absolutely terrible Hoffritz Sabatier stainless steel, wooden-handled boning knife with a 4-1/8" blade (105mm). 9-5/16" (235mm) overall length. Weight 1.94 oz (55g). I think I have butter knives that hold a better edge. She's had it about 30 years.

She likes it because if fits her and is light.

If there was a 100mm Artifex paring knife I think that would work. But there isn't one.

Any ideas? I'd love to get rid of this thing ;)

Wow, there are a bunch of 90mm and 120mm but splitting that difference is not as easy.

I know there are some 100mm Petty's out there...Nenox makes one.

Otherwise, a 120mm is as close as I can find.

This is an inexpensive nothing fancy 4" paring knife that my wife LOVES! http://www.chefknivestogo.com/fo4pakn.html
It holds it's edge better than you would think and is very easy to sharpen up when it does. She even puts it in the dishwasher! Image

Thanks for the help. I spent last night going searching through a ton of knife sites. I should have mentioned that the Hoffritz doesn't have a bolster, which is I think one of the reasons it fits her hand. I think Jeff's idea is one of the best.

FWIW - here is what I came up with. In no particular order:

Messermeister Four Seasons Spear Point Paring Knife - 4 in.
GIESSER Vegetable Knife 10 cms
Victorinox Forschner 4" Spear Point Paring Knife with Large Handle (not as heavy duty as the one Jeff recommended)
LamsonSharp Walnut 4 in. Grandma's New Used Paring Knife (might be closest to what she has, but I'm not thrilled with the wooden handle)
Furi Gusto Grip Paring Knife - 4 in.
Tojiro Flash Paring Knife - 4 in. (if I was buying it for me, this would be the one, but likely too heavy for her)

I'm going to show these and Jeff's recommendation to her and let her choose. I'm willing to bet she says that she likes the one she has :)

Hmmm. I may have a 4" Dojo paring knife that I am not using. Gotta see where I put it first!

A Wa petty in 120mm may be close to a 100mm petty if the blade is measured blade to handle instead of tip to heel. Maybe see how long the edge is on a Konosuke 120mm Wa petty?

The wife told me she like what she has. At least she's happy. Oh well, gave it a try.
