I've been browsing your page for quite some time now, trying to find the best knife for me. I just keep going back and forth, so I thought maybe you could help me out a bit.
I'm looking for a 240mm gyuto with an octagonal wa-handle, preferably ebony or some other dark wood,
I also have a Tojiro 150mm, VG-10, for fruit and other acidic stuff in the buying cart,
so I think I would like to try carbon steel for the 240 gyuto.
I'm not that sure of the profile, but i have used an old 10" sabatier which i liked.
And the finally the finish, I could really go either way but I've leaning on the cleaner look rather than the korouchi-style. But as I said, I'm not that sure.
Do you have anything that comes to mind it would really be helpful, otherwise I'll keep browsing for too long
Oh! And also, I live in sweden, approximately how long will the shipping be?
