Help me decide between 3 terrific knives

I'm hoping you can help me decide between 3 apparently terrific knives. I use a mac mighty 8' and a shun ken onion santoku.

anyway, 3 knives that i fancy from your website:

1. Kanehiro 240mm wa gyuto -
this looks like a dream, though i see it's out of stock. also it's a bit pricy.
I like the stainless cladding, wa handle and exposed steel hamon (or whatever it's called in knife talk). i note the 210 is available and my 8 inch mac hasn't ever felt too small, but internet forum after forum says the 240 is the way to go - i don't have local places where I can make my own comparison.

Moritaka:
2. KS 240 gyuto
3. KG 240 gyuto
I can't tell the difference between these two. any insight?
I like the rustic look, but I do worry a bit about the finish coming off, or keeping it in tip top shape.

let me know your opinion as it'll help me select a knife from your page.

Hi Aaron,

For home use we sell more 210s than 240s. It's a perfectly good size for doing most chores in the kitchen. Pros like a bigger knife so they can cut stuff more efficiently. So if you are looking at the Kanehiro I encourage you to try one. It's a great knife.

The Kanehiro is also available in the 240mm with Ginsanko steel as the core. Ginsanko is a very nice stainless steel. :) Never actually seen that exact knife, but from the AS version I had, it should be a great knife as well.

Otherwise, the Moritaka's are nice but I would lean towards the Kanehiro. I liked them a lot.

As Mark stated, the 210mm is still a good size especially if coming from an 8" Mac.

I have never used the kanehiro, but have owned the Moritaka KS and loved it. I don't think you can go wrong with either of those choices.

I'm the type of guy who will more than likely buy both... just looking for more 'hand made' vibe.

does the Kanehiro come with a darker Wa handle? I'm an inch away from buying the 210...

As an aside, my wife is Japanese - last month we were in Odawara and yokohama and couldn't find "authentica" anywhere. It was all Henkels and Wustorf over there. I picked up some obscure santoku and a nameless petty knife.. so are the Japanese just lost on their awesome knives and all the good stuff going export, or was I shopping in the wrong hood?

Shopping in the wrong location. The Tsukiji fish market area has a lot of retailers. There are other areas as well. :)

Not sure if Mark can get a darker handle for that knife or not.
