First of all I must say I am quite very impressed with your website/store. Unbelievable selection and pricing!
SO my mother announced to me she would be buying me a knife of my choosing for my bday and christmas combined.
I have been lurking the web researching and eliminating and have come to a conclusion. (somewhat...)
I am eyeing:
1. Konosuke HD(2? what is the 2) 240mm Gyuto
2. Miyabi 7000mc 240mm (wa) Gyuto
3. Tanaka Damascus 240mm Gyuto
4. One of your m390 offerings in a 240mm Gyuto format
As you can see I am decided on 24cm Gyuto, as it is all I have used for nearly 5 years now as a line cook and could not be happier with versatility and functionality of this size.
Here is some relevant info on me:
1. I love high carbon and take amazing care of my knives (many are high carbon). They are my babies and stainless is not necessary in the slightest.
2. I like a tall knife
3. I am 6'3" tall (big hands)
4. I use waterstones
So which would you recommend based on this? (budget aside)
If you do not have enough data/info on my application I would love to provide you with more.

I've been eyeing the Fujiyama's and the HD's, I don't mind a slightly thicker blade as long as there is some good convexing done to it! Too many knives, not enough knife blocks right now

HD2 has slightly longer flattish blade - less belly.
