A few things to add:
#1: I hate to call Rookie
out, cuz I love him, but the HD(2) moniker represents the second generation of steel in the HD line. It is still a High Speed Tool Steel, but the elemental proportions are slightly different in hopes to extend edge retention.
#2: It sounds as if he is explaining the Funayuki which, in fact, has less belly then the Gyuto & the tip 1/3 of the blade has less height in comparison to the Gyuto. He owns the Funayuki; I own two, as well. I find it allows finer precision with tip work.
#3: Bear in mind, the Kono-Tall... IS TALL! To each their own, of course, but I'm 6'2", 225#, have huge hands & the 49mm height on my Funayuki is awesome. I only raise the point because the 57mm Tall... IS TALL so maybe measure some knives you have to reference what you like before dropping the coin.
#4: You reference loving carbon steel. The HD/HD2 are "semi-stainless", but in numerous climates across the nation, I have never experienced any reactivity with them. Im not saying you love reactive blades, but the Tanaka is really the only Carbon Steel you proffered in your 4.
Enjoy which ever you choose...
