Could give an opinion on all 3 honesuki's? Fowler, Shun Blue Steel, Moritaka.

The Shun blue steel is a really nice little knife. I'm impressed with it and think it's an excellent value. They did good on these. I hope they do some gyutos.
The Fowler is a full custom knife by a good US maker. I love knives from the little custom makers. They're unique and they reflect the human who made them. I think his knives are worth the extra money. Stephan is a good dude and a good knife maker.
The Moritakas are a very interesting knife maker. Small village blacksmith shop in southern Japan and they make their knives in a small shop with just a few guys. They use aogami super steel which is my favorite steel of the three. Not complete customs like Fowler but also not production knives like Shun.
Take your pick.

I saw the Shun Blue in person today and it is absolutely beautiful... It is a great value and it comes with a custom saya which will save you 30 bucks over the other two. The blade is shorter and fatter than traditional honesuki's which looks like it will make it easier to maneuver and cut around bones and cartilage.

Fowler makes a really nice honesuki as well. He sent me one with a hollow ground back like a traditional single bevel knife and it was really nice.
