Mark, I will buy a kiritsuke in December.
I don't know the exact model. So, I need your help.
I want a double beveled Kiritsuke, brand Konosuke, 240 mm.
I want the thinnest one, with the small thickness possible. If you find some with 2 mm or less, better.
Can you give some suggestion?

Do you want stainless or carbon steel?
The two knives that are thinnest are HH and HD and the regular White #2. They are stainless, semi stainless and carbon respectively.
