I just sharpened it on Shapton 320, Amikusa natural, then Shobu... and it took well to the naturals. That's a good sign for grain structure IMO. Takes a seriously steep edge.... I can imagine it'll take as steep of an edge as your hands will allow you to put.

Did you find it easier to sharpen as apposed to a steel like M390?

i read on somewhere by a rather known knife guy and sharpener that he found it to sharpen similarly as easy or difficult as m390.....he bought a hap40 knife while he was in japan and has had it a while.

Well, it's not butter to sharpen, lets say that... but once you get the bevel established it seems to move right along nicely. I didn't get to sharpen the m390 knives that I handled, nor did I even cut with them, they were out the door before I could say goodbye. Give me another day or so to play with the knife, I'm not confident in my assessment yet. So far, it seems a little easier to sharpen than CPM 154, but this tester I have was already sharpened 90/10 and pretty steep, so I kinda have to knock the edge down and bring it back a couple of times to get a better idea. More to come shortly.

Adam - I'd put those glass boards in the trash can - they're OK for putting hot dishes on but cutting - WTF?

Hey, I tried to throw them away....every time I visit the in-laws. I even bought them a wooden board. Problem is, it's only used by me when I go to visit. It's too difficult to wash...."We like just putting this in the dishwasher".

old habits die hard i guess. this coming from a country where dishwashers are more seen in commercial places, and not homes.

Glass cutting boards? Man, I've whipped whole-sale a$$ for less.. just sayin..
kidding kidding. Just throw them away when they aren't looking or something, but be nice enough to replace them with at least side-grain bamboo. You can get some of those for under 10 bucks at second-hand stores all day.
