Gyuto that's easy to sharpen.

Hello I trust you two are well and had a question for you as time allows.

I am a home cook looking at several options of gyutos and I would love some of your expertise. I am looking for either a 240 or 270 with the following considerations.

Handle either D or octagonal
Ease to establish an edge - do you offering sharpening options on most stock prior to shipping or is it mostly factory edges?
Edge retention
Overall durability - I have worked with both SS & carbon in the past

I would appreciate if you could recommend a few options in or around the $175 - $250 range. I definitely like several of your Richmond range including the Damascus, but noticed many are out of stock. Do you know if or when you'll get more on hand?

Also, can you give me a little more insight on the Ultimatum? Thanks and have a great weekend.
