I was looking at 1 of 2 gyuto ? Takeda and moritaka
And wanted to get but comments opinions on both these 240 mm knives

I slightly prefer the Takeda Gyutos.

Takeda's are somewhat better made in my opinion.
Moritaka's are good and can be great....but Takeda's are just typically better.
If a Takeda is in the budget, I'd go that route.

PETE <> Here's one the other way. I find geometry to be almost more important than quality... to an extent (don't get carried away). A Takeda 240 is CRAZY CRAZY CRAZY tall... like 58mm tall give or take. If you think you will like a Gyuto that's shaped more like a 190mm Nakiri with a 50mm tip tacked on the end... the Takeda is for you. If you would be more comfortable with a Gyuto that more closely resembles a Western Chef's knife, go with the Moritaka.
The fit & finish is better & the overall quality might be slightly higher on the Takeda, but I would take the Moritaka Gyuto over a Takeda all day everyday.

I like taller knives. If it ain't at least 50mm, it's too small. (not speaking of petty's, etc). And i can't handle flexible knives either...
Moritaka is kinda what you get, when you can't afford the Takeda.
Moritaka is a rectangle with good steel....Takeda has some curves and shape and balance and style and...something more.
I've been kinda dreaming about that tall Gyuto lately. A beauty monster knife.

The KU finish seems much more durable on my Takeda than my Moritaka. The latter's KU finish has almost all come off by now, but that said, I have almost no rust developing. My Moritaka is the KS series which is patterned after a French Sabatier. Knife gets screaming sharp, holds its edge for what seems like an enternity and cuts very well. While I don't have the Moritaka gyuto, the KS is still just north of 240 mm, and performs very well. I think the price point is dramatically different on the two brands such that I would lean more to the Moritakas, but both are fun well-made knives.

i prefer moritakas though.
